Vitamin C Deficiency

Vitamin C is the body's major antioxidant. Essential for collagen synthesis, it protects blood vessels, gums, skin and the immune system. As Linus Pauling, double Nobel laureate, reminded us, our actual needs far exceed recommended intakes. Prolonged deficiency leads to scurvy, but more subtle deficits are extremely common and manifest as capillary fragility, easy bruising and accelerated aging linked to oxidative stress.
