Dr Yoshihide Hagiwara, a Japanese pharmacologist, devoted 13 years of research to analyzing more than 200 plants before concluding that young barley grass was the most nutritionally complete. His book “Green Barley Essence” (1985) popularized this superfood in Japan and then throughout the world. Barley grass shares the properties of wheat grass but is distinguished by a higher concentration of SOD (superoxide dismutase), the most powerful antioxidant enzyme in the human body.

Bioactive molecules
Dr Hagiwara analyzed more than 200 plants over 13 years before concluding that young barley grass was the most nutritionally complete¹. It contains saponarin, an antioxidant flavonoid absent from wheat grass². It is richer in GABA, the inhibitory neurotransmitter that promotes relaxation and sleep³. 18 amino acids including the 8 essential ones, with particular richness in tryptophan, a precursor to serotonin⁴.
Barley grass contains a unique flavonoid: saponarin, a powerful antioxidant absent from wheat grass. It is also richer in GABA (gamma-aminobutyric acid), an inhibitory neurotransmitter that promotes relaxation and sleep. The amino acid profile is remarkably complete: the 8 essential amino acids are present in balanced proportions. Like wheat grass, it contains no gluten at the young sprout stage.
Table of key micronutrients
| Micronutrient | Main role |
|---|---|
| SOD (enzyme) | Most powerful antioxidant in the body, cellular anti-aging |
| Saponarin | Antioxidant flavonoid unique to barley |
| GABA | Relaxing neurotransmitter, improves sleep |
| Chlorophyll | Oxygenation, blood detoxification |
| Vitamins B1, B2, B6 | Energy metabolism, nervous system |

Preparation with a cold press juicer
Ingredients:
- 1 tray of fresh barley grass (30 g)
Barley grass has a slightly sweeter taste than wheat grass. If you’re new to grass juices, start with barley. Same protocol: 15 ml the first few days, then 30-40 ml. You can also mix the two grasses in equal parts.
My recommended juicer
For this recipe, I use the Hurom H310A. Cold pressing preserves all the enzymes, vitamins and phytonutrients that the heat from a centrifuge would destroy.
