During my years as a flight attendant on short-haul flights, I watched passengers order orange juice at breakfast with the quiet certainty that they were doing something healthy. That industrial juice in a carton, pasteurized, reconstituted from concentrate, stored for months, had nothing to do with fresh orange juice. One day, I brought my juicer on a layover in Lisbon and pressed oranges from the market. The crew couldn’t believe it.

Bioactive molecules

What makes fresh orange juice superior to an ascorbic acid tablet is the complete vitamin C complex: bioflavonoids, rutin, and folic acid that work synergistically¹. Hesperidin strengthens blood capillaries and reduces winter vascular fragility². Vitamin C (53 mg/100 g) is essential for collagen synthesis, iron absorption, and the regeneration of oxidized vitamin E³. Pasteurized industrial juice has absolutely nothing in common: the enzymes are dead, the vitamin C is destroyed⁴.

The vitamin C in orange (approximately 53 mg/100 g) is the emblematic nutrient, but what makes fresh juice superior to an ascorbic acid tablet is the complete vitamin C complex in its entirety. Food-based vitamin C is not an isolated nutrient: it’s a synergistic ensemble that includes ascorbic acid, bioflavonoids, rutin, hesperidin, and the J and K factors of vitamin C identified by Szent-Györgyi, the Nobel Prize winner who discovered vitamin C. Kousmine insisted on this fundamental distinction: synthetic vitamin C does not replace natural vitamin C accompanied by its bioflavonoids, which multiply its absorption and effectiveness.

Orange concentrates hesperidin (30-60 mg/100ml of juice), a flavanone that improves microcirculation by strengthening capillary walls. Morand et al. (‘Hesperidin Contributes to the Vascular Protective Effects of Orange Juice,’ American Journal of Clinical Nutrition 93, no. 1 (2011): 73-80) show that 500 ml of orange juice per day improves endothelial function by 30% after 4 weeks. Vitamin C (53 mg/100g) and folates (30 mcg/100g) complete its profile.

Freshly pressed orange is a source of vitamin C, hesperidin, and anticancer limonene. It is recommended to press it by hand, never with an extractor to avoid the bitter white albedo. In winter, a fresh orange juice each morning is an elementary preventive gesture.

Preparation with extractor

Ingredients:

  • 2 raw beets
  • 2 apples
  • 1 piece of ginger (3 cm)
  • 1 peeled lemon

Fresh orange juice oxidizes in 20 minutes and loses up to 50% of its vitamin C in 2 hours. Drink it immediately after extraction, never prepare it the day before.

What I personally think

After each surf session at Imsouane, Morocco, I would drink a large glass of freshly pressed orange juice facing the sea. When I worked in aviation, I would leave my Marrakech base whenever I could to surf that legendary right-hander. Fresh orange juice after two hours in the water, feet in the sand, the sun setting over the Atlantic. It’s this memory that returns every time I press oranges in my Hurom.
