Each spring, for three weeks, I do my birch sap cleanse. It is not juice in the classical sense: it is the raw sap of the tree, harvested by piercing the trunk when the sap rises in March. The liquid is clear, slightly sweet, with a very subtle woody taste. In naturopathy, birch sap is considered the greatest spring drainer. Marchesseau himself recommended it to ‘cleanse the humours after winter’. I order it every year from a small producer in the Jura who harvests by hand. It is a ritual of renewal, as ancient as naturopathy itself.

The bioactive molecules

Birch sap is not juice in the classical sense; it is the raw sap of the tree harvested in March-April when it rises in the trunk¹. It contains betuloside and monotropitoside, two heterosides with documented diuretic and anti-inflammatory properties². Its mineral profile is unique: manganese, calcium, potassium, silicon and magnesium in proportions that no other plant reproduces³. It is the gentlest renal drainer that exists; Marchesseau recommended it in a 3-week cure at seasonal changes⁴.

Birch sap (Betula pendula) is a natural aqueous solution containing minerals in remarkable concentration: potassium (150 mg/l), calcium (55 mg/l), magnesium (23 mg/l), manganese (3.5 mg/l) and organic silicon. Manganese is the cofactor of mitochondrial superoxide dismutase (SOD2), a key enzyme in cellular antioxidant defence. Organic silicon participates in collagen and elastin synthesis, and supports bone remineralisation. The sap also contains betulin and betulinic acid, two triterpenes with anti-inflammatory and hepatoprotective properties documented by Šiman et al. (Phytomedicine, 2016). Natural sugars (fructose, glucose, 0.5 to 2%) provide gentle energy without glycemic spikes. The malic acid present stimulates the Krebs cycle. The sap exerts a gentle diuretic effect that promotes the elimination of uric acid and nitrogenous waste through the renal pathway, making it a major ally of spring cleanses.

The birch sap cure is an essential classic of spring naturopathy. It is a gentle renal drainer, an exceptional remineraliser and a natural hepatoprotector. Three weeks per year are enough to restart the emunctories after winter. It is the only ‘juice’ in this book that does not go through an extractor, and it may be the most powerful.

Extractor preparation

Ingredients:

  • 1 bunch of dandelion leaves
  • 4 organic carrots
  • 1 green apple

Birch sap must be fresh, unpasteurised, kept in the refrigerator and consumed within 3 weeks of harvest. Drink 250 ml each morning on an empty stomach for 21 days. Do not freeze it; it loses its properties.

For this recipe, I use the Hurom H400. Cold pressing preserves all the enzymes, vitamins and phytonutrients that the heat from a centrifuge would destroy.
