When I was a steward on short-haul flights, half the crew had stomach problems. Shifted schedules, reheated food, the stress of rotations: a perfect cocktail for developing gastritis. A flight captain once told me he drank a glass of raw cabbage juice every morning before his flights. A remedy his Polish grandmother had passed down to him.

The bioactive molecules

Cabbage is the ultimate anti-ulcer vegetable. Dr. Garnett Cheney (Stanford, 1950s) healed gastric ulcers in 10 days with raw cabbage juice¹. S-methylmethionine (vitamin U) stimulates the production of protective mucus by stomach goblet cells². Glutamine repairs the intestinal wall, which is why it’s essential in cases of intestinal permeability³. Sulforaphane activates phase II detoxification enzymes in the liver⁴. As a poultice with the pulp: sunburns, sprains, mastitis.

“Vitamin U” is actually S-methylmethionine, a derivative of the amino acid methionine. This compound is not a vitamin in the strict sense, but its action on the digestive mucous membranes is so powerful that the name stuck. S-methylmethionine stimulates the production of protective mucus by gastric wall cells and accelerates the regeneration of damaged epithelial cells. This is exactly what an ulcerated stomach needs: more protection and accelerated repair. Cabbage juice is also rich in L-glutamine, an amino acid that intestinal cells use as their primary fuel for regeneration.

Cabbage contains glucosinolates that transform into sulforaphane when ground, a powerful activator of hepatic detoxification phase II enzymes. Zhang et al. (‘A Major Inducer of Anticarcinogenic Protective Enzymes from Broccoli,’ Proceedings of the National Academy of Sciences 89, no. 6 (1992): 2399-2403) identify sulforaphane as the most powerful known inducer of detoxification enzymes. L-glutamine, an amino acid abundant in cabbage juice, is the preferred fuel for enterocytes. Cheney (‘Rapid Healing of Peptic Ulcers in Patients Receiving Fresh Cabbage Juice,’ California Medicine 70, no. 1 (1949): 10-15) demonstrates that cabbage juice accelerates the healing of gastric ulcers in 10 days.

Preparation with a cold press juicer

Ingredients:

  • 1/2 green or white cabbage
  • 3 organic carrots
  • 1 green apple

Use GREEN cabbage preferably (richer in chlorophyll and vitamin U than white). In case of ulcer, drink 3 x 150 ml per day between meals for 3 weeks. Don’t throw away the pulp! The dry residue of cabbage after extraction makes excellent poultices. Apply the still-moist pulp in a thick layer on the area to be treated, cover with cloth and let sit for 1 to 2 hours. Uses: painful joints (osteoarthritis, sprains, tendinitis), breast engorgement during breastfeeding, minor burns and sunburn, abscesses and boils to accelerate maturation, heavy legs and varicose veins, headaches (poultice on the nape). Cabbage is an external anti-inflammatory used since antiquity: Cato the Elder already prescribed it for wounds and joint pain.

For this recipe, I use the Hurom H310A. Cold pressing preserves all the enzymes, vitamins and phytonutrients that the heat from a centrifuge would destroy.
