Ann Wigmore, pioneer of the “living foods” movement in Boston in the 1960s, built her entire therapeutic protocol around wheatgrass. She told of having healed her own gangrene with poultices and wheatgrass juices. Exaggeration? Perhaps. But the biochemistry of wheatgrass is truly exceptional. 30 ml of this intense green juice contains as much chlorophyll as 1 kg of spinach. It is a concentrate of life in a thimble.

Bioactive molecules

Wheatgrass harvested at the young shoot stage (10-12 days) does NOT contain gluten, gluten is a protein of the grain, not the leaf¹. Its chlorophyll is structurally identical to human hemoglobin (magnesium instead of iron), hence its oxygenating power². The enzymatic profile is remarkable: SOD, cytochrome oxidase and catalase, three major antioxidant enzymes³. 30 ml would be equivalent to 1 kg of green vegetables in nutritional density⁴.

Wheatgrass is harvested at the young shoot stage (10-12 days after germination), before the grain forms. At this stage, it does NOT contain gluten (gluten is a protein of the grain, not the leaf). Its chlorophyll, structurally identical to human hemoglobin (a magnesium atom instead of iron), promotes tissue oxygenation. It concentrates vitamins A, C, E, K and the entire B complex, with a remarkable density of iron (2.2 mg/100g) and magnesium (24 mg/100g) for a grass. The enzymes superoxide dismutase (SOD) and catalase, naturally present, neutralize free radicals.

Preparation with a cold press juicer

Ingredients:

  • 1 tray of wheatgrass (30 g)
  • 1 green apple

Start with 15 ml the first few days: wheatgrass often causes nausea in beginners (detox effect). Gradually increase to 30-40 ml. Grow it yourself in a tray with organic soil: 10 days of growth is enough. Cut with scissors just above the soil.

For this recipe, I use the Hurom H80-ST. Cold pressing preserves all the enzymes, vitamins and phytonutrients that the heat of a centrifuge would destroy.
