Watercress is the most nutrient-dense vegetable according to a CDC study (2014), with a score of 100/100 ahead of Chinese cabbage and Swiss chard. It is the primary source of organic sulfur in the plant kingdom, a direct precursor of glutathione, the liver’s master antioxidant. This sulfur participates in hepatic detoxification in phase II, the stage where the liver conjugates toxins to make them eliminable by the kidneys. Its richness in organic iron (2.2 mg/100g) and vitamin C (43 mg/100g) makes it a first-rate blood regenerator. Vitamin K (250 mcg/100g) supports coagulation and bone metabolism. The natural iodine it contains nourishes the thyroid. In naturopathy, watercress salad, like dandelion salad, should be eaten raw, without alcohol vinegar, pepper or salt, to preserve its virtues. Watercress juice is too powerful to drink alone: never exceed 100 ml of pure juice, always diluted in water to reach 20-30 cl. Indications: spring cleanse, congested terrain, vascular fragility, anemia, acne, eczema, liver fatigue. The bioactive molecules
Watercress scored 100/100 in the CDC study (2014) on vegetable nutrient density¹. It is the primary source of organic sulfur in the garden, the kind your liver needs to conjugate toxins in phase II detoxification². Sulfur also fuels the synthesis of keratin (hair, nails) and collagen (skin, joints)³. Its richness in iron, calcium and vitamin C makes it a first-rate blood rebuilder⁴.
Organic sulfur is watercress’s biochemical signature. This mineral is involved in the synthesis of glutathione, the master intracellular antioxidant, the one your liver uses to neutralize toxins, heavy metals and free radicals. Without sulfur, no glutathione. Without glutathione, the liver is overwhelmed. Science didn’t know the word “glutathione,” but he had clinically observed that watercress juice triggered deep liver cleansing in his patients, and this is exactly the mechanism that explains it.
Watercress is a concentrate of glucosinolates, sulfur molecules that transform into isothiocyanates during chewing or grinding. Phenethyl isothiocyanate (PEITC) inhibits cancer cell proliferation in vitro³: 159-168). Watercress also concentrates vitamin K1 (250 mcg/100g, or 300% of RDA) and vitamin C (43 mg/100g). Gill et al. (‘Watercress Supplementation in Diet Reduces Lymphocyte DNA Damage and Alters Blood Antioxidant Status,’ American Journal of Clinical Nutrition 85, no. 2 (2007): 504-510) show that daily watercress consumption reduces lymphocyte DNA damage by 17%.

Preparation with a cold press juicer
