While rereading “Fresh Vegetable and Fruit Juices” by Walker for the third time, I came across the passage dedicated to Dr. Garnett Cheney and his work on cabbage vitamin U. Gastric ulcers healed in ten days with raw cabbage juice, whereas medical treatments of that era took weeks. I put the book down, amazed by the simplicity of the remedy.

The bioactive molecules
Raw cabbage contains S-methylmethionine (vitamin U), the compound that healed gastric ulcers in 10 days in Dr. Cheney’s work at Stanford¹. Cabbage glutamine is the preferred fuel of enterocytes, it restores intestinal permeability². The beta-carotene from carrots protects digestive mucous membranes and supports cellular regeneration³. This is the juice for intestinal repair, the one Walker prescribed against colitis, ulcers and gastritis⁴.
The anti-ulcer juice par excellence. Raw cabbage, a source of vitamin U, combined with the carrot’s protective properties for mucous membranes.
The carrot-cabbage duo is the quintessential winter juice. The carrot softens the cabbage, the cabbage brings anticancer glucosinolates and vitamin C. This basic winter juice can be varied endlessly: ginger for warmth, lemon for C, celery for minerals.

Preparation with a juicer
Ingredients:
- 5 organic carrots
- 1/4 white cabbage
- 1 fennel bulb
- 1 green apple
Pure cabbage juice is difficult to drink on its own: carrot makes it pleasant. This juice is recommended for gastric ulcers thanks to cabbage’s anti-ulcer factor (vitamin U).
