The Vitality Juice: Carrot, Beetroot, Lemon, Ginger
It’s the juice I prepare every Monday morning to start the week. Four ingredients, not one more. The carrot brings sweetness, the beetroot brings power, the lemon brings freshness, and the ginger provides the kick. A patient once told me: “This juice is like coffee, but better.” He was right. Raw beetroot gives the mixture an intense red color that always impresses. The ginger has just the right amount of bite to awaken the taste buds. It’s a complete, balanced juice that appeals equally to beginners and regular users.

The bioactive molecules
Beetroot provides vasodilatory nitrates, carrot provides lipid-soluble beta-carotene, lemon chelates minerals to increase their bioavailability, and ginger inhibits COX-2¹. The synergy of beta-carotene + vitamin C + gingerols creates an antioxidant and anti-inflammatory cocktail particularly suited to early spring conditions². The citric acid in lemon improves the absorption of non-heme iron from beetroot by reducing it to absorbable ferrous form³.
Raw beetroot concentrates 250 to 300 mg of inorganic nitrates per 100 g. These nitrates follow the entero-salivary cycle: absorbed by the intestine, concentrated in the salivary glands, reduced to nitrites by oral bacteria, then converted to nitric oxide (NO) in the stomach. NO is a powerful vasodilator that improves tissue perfusion. Carrot provides 8,285 µg of beta-carotene per 100 g, a precursor to vitamin A. Lemon provides citric acid that chelates minerals and improves their bioavailability, particularly non-heme iron from beetroot (0.8 mg/100 g). Ginger contains gingerols and shogaols, phenolic compounds that inhibit cyclooxygenase (COX-2) and exert an anti-inflammatory effect comparable to ibuprofen according to Grzanna et al. (Journal of Medicinal Food, 2005). The synergy of beta-carotene + vitamin C + gingerols creates an antioxidant and anti-inflammatory cocktail particularly effective for supporting the terrain in early spring.
This four-ingredient juice is a classic of spring naturopathy. It supports circulation, nourishes the blood, stimulates digestion, and provides stable energy without stimulants. It’s the juice of renewal, the one I recommend to all my patients as they emerge from winter.

Preparation with a cold-press juicer
Ingredients:
- 4 organic carrots
- 1/2 beetroot
- 1 lemon, peeled
- 1 piece of ginger (2 cm)
Pass the carrots first, then the beetroot cut into quarters, the ginger, and finish with the peeled lemon. The acidity of the lemon prevents oxidation and preserves the vibrant red color. Drink it within 15 minutes.
