As a kid, I watched Popeye gulp down his canned spinach and become invincible. Like everyone else, I believed it. As an adult, studying juices for the first time, I understood that canned spinach had absolutely nothing to do with raw spinach.

Bioactive Molecules

Raw spinach is the food richest in lutein and zeaxanthin (12,198 mcg/100 g), the two carotenoids that deposit in the macula and form a protective filter against blue light and UV rays¹. Organic iron (2.7 mg/100 g), accompanied by its natural vitamin C, is absorbed three times better than iron from dietary supplements². Chlorophyll, structurally identical to hemoglobin except for one atom, oxygenates tissues³. It’s the juice for screens, macular degeneration, eye strain, and iron-deficiency anemia⁴.

Raw spinach is the anti-anemic food par excellence. Its leaves are rich in calcium, iodine, iron, chlorophyll, flavonoids, vitamins C, K1, folic acid, and provitamin A. The organic iron in spinach (2.7 mg/100g), accompanied by its natural vitamin C, is absorbed three times better than iron from a tablet. Its chlorophyll, structurally nearly identical to hemoglobin (only the central atom differs: magnesium instead of iron), is a natural precursor of blood regeneration. Lutein (12,200 mcg/100g) protects the retina against macular degeneration. Magnesium (79 mg/100g) is a cofactor in over 300 enzymatic reactions. Raw spinach juice powerfully stimulates intestinal peristalsis, making it a natural remedy for chronic constipation without the irritating effects of chemical laxatives. Highly recommended for infants (in fresh juice), children, the elderly, and convalescents. Absolute rule: spinach must be consumed exclusively raw, as juice or in salads. When cooked, oxalic acid binds to calcium and forms crystals that irritate the kidneys. Never exceed 100 ml of pure juice per day, always diluted in carrot juice.

Preparation with a Cold Juicer

Ingredients:

  • 4 organic carrots
  • 100 g fresh blueberries
  • 1 handful fresh spinach

It is not recommended to drink spinach juice alone in large quantities. 100ml per day maximum, always mixed with carrot juice. Its peristaltic action is very powerful.
