My first juice was a carrot juice. I had bought an entry-level juicer and a kilo of organic carrots at the Belleville market. I passed the carrots through one by one, fascinated by the bright orange liquid flowing into the glass. And then I drank it. It was sweet, luminous, alive. Nothing like a juice from a carton. In three days, my skin had changed color, my colleagues were asking me if I had gone on vacation. Walker placed the carrot at the top of all his formulas, and for good reason: it’s the juice for beginners, the one where everything starts. If you were to remember only one, it would be that one.

Bioactive molecules

Raw pressed carrot releases a remarkable concentration of beta-carotene (8,285 µg/100 g), a precursor to vitamin A that the liver converts according to the body’s needs. This orange pigment protects your digestive mucous membranes, retina, and skin against oxidative stress. Potassium (320 mg/100 g) supports acid-base balance and blood pressure. Walker insisted on the organic calcium in carrots, different from inorganic calcium in pasteurized dairy products: a living calcium, directly assimilable by cells. The water of constitution in the carrot is structured water, organized by the plant during its growth, water that Fritz-Albert Popp would have described as rich in biophotons. Falcarinol, a polyacetylene present in carrots, is the subject of research for its antiproliferative properties. Finally, the soluble pectin in carrots nourishes beneficial microbiota bacteria and facilitates transit. It is this combination, beta-carotene, organic minerals, living water, and soluble fiber, that makes carrot juice the universal foundation of all Walker formulas.

Carrot juice is your gateway into the world of juices. Drink it pure, on an empty stomach in the morning, for at least two weeks. You will feel the difference: better complexion, more stable energy, easier digestion. It is the foundation on which all other formulas are built.

Preparation with a juicer

Ingredients:

  • 500 g of organic carrots (preferably from open ground)
  • 1 splash of lemon (optional)

Choose open-ground organic carrots, still with a bit of soil on them. The fresher they are, the higher the juice yield. A splash of lemon in the glass slows oxidation and adds vitamin C. Always drink your juice within 15 minutes of extraction.

For this recipe, I use the Hurom H310A. Cold pressing preserves all the enzymes, vitamins, and phytonutrients that the heat from a centrifuge would destroy.
